You could go to the Scotch Whisky experience (if you both like whisky). Its really good and in the heart of the city in the middle of the old town so wont need to travel anywhere - https://www.scotchwhiskyexperience.co.uk/
I'd also recommend going to a comedy show, Edinburgh is well known for comedy from hosting the Fringe Festival every year in August. The Stand is the most famous comedy club in Edinburgh and worth checking out.
