Although you perceive it as hard work and grit, if you're cold-emailing people in a more senior position than you on a federal holiday, they're more likely to just be annoyed by the email, rather than respect you for the hustle. Up to you though.

The frustrating thing about the delayed send is that its still timestamped at the time you sent it, not when they received it. So if I'm reading through my emails I may look back and think i got it on july 4th lol

Fake holidays are Columbus Day, Presidents Day and maybe some other bullshit that I'm forgetting.

People read e-mails when they have time. Lots of people work on things like networking over a weekend. I don't think it's a big deal - it's the day you have time to do it, not your fault.
I never get offended by when I receive an e-mail - sometimes people send things at 2 am.
If you're really concerned, draft them and hold off shooting them until the next day. It's a great opportunity to say "hope you enjoyed the holiday"
On this point, I wouldn't necessarily get mad about it, but other than swipe the notification off my home screen and reply a few days later, I would probably think you're a bit of a loser and don't have any friends.
