It’s very different across the first years in my group. Half of us, myself included, are drowning because of the volume of work. The other half seem blissfully understaffed. Am I just this bad at the job?

Staffers aren't perfect and the workload per project is extremely variable. They may see similar numbers of projects while failing to realize that a few people have extremely involved, high-hour projects vs. others with low-touch projects.
