Pigeon-holed before finishing undergrad?

I'm a junior bsc economics student (3.75GPA) at a top 40 undergrad business school (non-target, but well known in tri-state area). I worked full-time in insurance sales for 3 years while earning an Associates Degree before transferring. I worked my way up from an individual producer to a sales manager but now I feel like I am pigeon-holed into the insurance/sales industry. I've had 3 out of 4 internship interviews where I was asked, "So this is it? You're done with insurance/sales and moving on?" I try to explain to them that this was a temporary job that allowed me to pay rent and tuition and avoid manual labor but then I feel that I'm dismissing all of my achievement and skills that I gained while working. Its extremely frustrating to feel stuck so early in my career. I thought of removing all of my experience from my resume, but then I can't use it answer common behavioral questions (leadership, teamwork, risks) and my resume will have more empty space. Anyone have some advice? I'm interesting in IBD, ER, Trading.
